Craving fried rice and schezwan rice? Make it at home

By the FeedMeNot team. Updated 3 November 2026.

Egg fried rice with leftover rice
Time: 15 minutes. Serves 2. Type: Egg or veg. Rough home cost: Rs 30 to 55 a serving (an estimate that changes with city, season and brand).

Why you crave it

Fried rice is salty, savoury and a little smoky, with soft egg and crisp vegetables. It is often a craving because it feels like a full meal in one bowl. The secret is cold, dry rice and high heat, which is also why it is the best use for yesterday's rice.

Before you order: take the 20 minute pause

A craving usually peaks and fades. Start the craving timer and rate the urge. If it is still strong after twenty minutes, this recipe is a better answer than a delivery order, and you will have a hot meal ready in about the same time.

Ingredients

  • 2 cups cooked, cold rice (basmati or regular)
  • 2 eggs, lightly beaten with a pinch of salt
  • 1/2 cup chopped beans, carrot and peas
  • 2 spring onions, chopped
  • 3 garlic cloves, minced
  • 1 tbsp soy sauce, 1/2 tsp pepper, salt
  • 2 tbsp oil. For Schezwan style: 1 tbsp Schezwan sauce

Method

  1. Break up the cold rice with your hands so there are no lumps.
  2. Heat oil in a wok on high, scramble the eggs until just set, and take them out.
  3. In the same wok fry the garlic, then the vegetables for 2 minutes.
  4. Add the rice, soy sauce, pepper and Schezwan sauce if using. Toss on high heat for 3 minutes.
  5. Return the eggs, add spring onion and check the salt.
Tip. Fresh hot rice turns mushy. If you only have fresh rice, spread it on a plate for 20 minutes or chill it for an hour.

What this costs compared with delivery

The home cost above is a rough range for the ingredients, based on typical retail prices. Delivery apps add fees, taxes and often a tip on top of the dish price. Common questions

Can I make it vegetarian?

Skip the egg and add paneer cubes or tofu browned in the pan first.

How do I get the street-style smoky taste?

Use the highest heat you can, cook in small batches and add the soy sauce along the side of the wok so it sizzles.
